Easy Vegetarian Curry (very yummy and eaten by the whole family)

This really is a very easy recipe,, mainly because it involves cheating by using a store bought jar of curry paste. But it tastes so good and the list of ingredients on the back doesn't include any nasties. So here it is:

Ingredients:
1 red onion, chopped
1 clove of garlic, chopped finely
6 medium potatoes cut into 2cm(ish) cubes
2 medium sweet potatoes cut into roughly the same sized pieces as the potato
1 large carrot,cut into 1cm cubes
1 cup chicken stock
400ml  can of coconut cream
400g can of haricot beans
1 jar of Valcom Massaman curry paste
2 Tablespoons of sugar
3 Tablespoons of fish sauce
Natural yoghurt to serve
Coriander and spring onions, chopped, to serve


Method:
Use about a tablespoon of rice bran or avocado oil to brown the onion and garlic. Add the vegetables and saute for a minute or two. Add the jar of paste and cook and stir for a minute or so.
Add the fish sauce and sugar, stock, beans and coconut cream.

Let it simmer for about 20 minutes, or until the potatoes are cooked through.

While that's cooking put your rice on to cook. I used jasmine, but it is nice with basmati or brown rice too.

Serve topped with coriander and spring onions and yoghurt if you like.

This tasted delicious, was warming and filling. It isn't too spicy and my 2 year old happily ate it.

You could use other beans( I think chickpeas would be nice), and any vegetables. I've made it before with cauliflower and peas and it was just as good. I also make it with chicken.
